Cedar Salmon & Clementine-Ginger Glaze

Cedar wrapped Salmon with a quick homemade Clementine-Ginger glaze is the perfect weeknight meal that is both simple and healthy. Grilled to a smokey perfection, this meal will be ready in about 15 minutes. Ready, Set, Go!

Listen, I am a special education teacher. My energy level by the end of the day is just about empty. Therefore, making elaborate meals after work is not always on my To Do list. Tonight I came home and whipped up this meal super fast. Want to know the best part? It tasted like I slaved in the kitchen for hours, maybe even days. Let them think what they want.

I bought these cedar wraps (click to buy) from Walmart, right next to the charcoal grills. We were also buying a charcoal grill because our gas grill was crushed to smithereens by icicles. Ingredients

2 salmon fillets

1 bunch of asparagus

1 clementine, sliced in circles

salt and pepper

2 cedar wraps with twine (included)

Glaze

1 cup water

1/2 cup sugar

2 clementines, juiced and save the remains

1 inch chunk of ginger, minced

Serves: 2

Instructions

For the Glaze:

  • Add all ingredients to a sauce pan (including the remains of juiced clementines)
  • Boil on high, stirring occasionally
  • Remove from heat when glaze thickens and reduces to about half (about 7-9 minutes)

Assemble Cedar Wraps:

  • Soak the wraps and twine in water for 5 minutes
  • Spray the inside of wrap with cooking spray
  • Lay the salmon skin-side down on top of wrap
  • Brush Clementine-Ginger glaze onto Salmon
  • Season with salt and pepper
  • Layer two slices of Clementine on next
  • Lay 4 asparagus stalks last , season again with salt and pepper
  • Wrap the packet up with twine

Time to get your grill on. Like literally, turn your grill on. Grill the Salmon bundles and extra Asparagus that didn’t make it into the wrap for about 7-8 minutes.
