Mango-Basil Chicken with Freekeh

Succulent chicken is cloaked in a sweet and savory mango-basil sauce and served with freekeh. Let me paint the picture. The chicken breast is pan-seared to seal in its juices and then baked in the oven at a high temperature, leaving it extremely moist. Fresh mango is simmered in dry white wine and chicken broth, which elevates the fruit to a new level. Freekeh is an ancient cracked roasted green wheat that is light with a nutty fragrance. Combine all of these ingredients to make a harmonious and healthy meal. It’s time to serve up something fun and unique for dinner!

Ingredients

Freekeh

  • 1  1/4 cups chicken broth
  • 1/2 cup freekeh
  • salt and pepper to taste

Mango Sauce

  • 1/2 cup dry white wine
  • 1/4 cup chicken broth
  • 1 whole mango, chopped
  • 1 tablespoon butter
  • 1/4 cup basil, sliced thin
  • salt and pepper to taste

Chicken

  • 2 chicken breasts
  • 1/2 cup flour
  • 1 tablespoon olive oil
  •  salt, pepper, garlic powder to taste

Preparation

  1.  Preheat oven to 415 degrees
  2. Add Freekeh ingredients to a medium sauce pan and bring to a boil. Then reduce heat to medium-low, cover and let simmer for 18 minutes. Fluff with a fork.
  3. Pat the chicken breasts dry. Add salt, pepper and garlic powder to the flour on a flat plate. Lightly coat each side of the chicken with seasoned flour, shake off excess flour. Heat a skillet with olive oil and pan-sear the chicken for about 2 minutes on each side until golden. It does not need to be cooked in the middle. Then transfer the chicken to a cookie sheet lined in parchment paper. Bake for 8-10 minutes depending on the thickness. Take it out of the oven and let it rest for 5 minutes.
  4. While the chicken bakes, pour the Mango Sauce ingredients into the chicken skillet and deglaze the pan. Let simmer on medium for 2-3 minutes. Season with salt and pepper to taste.
  5. Plate: Put freekeh on the plate, then top with sliced chicken. Pour on Mango Sauce and garnish with Basil.
