An absolutely beautiful refresher as the weather warms up. Fresh strawberries, cucumbers, limes, mint and a splash of rose water creates a simple sip to cool your soul on a sunny day.
It’s been gorgeous outside this week. We have been doing so much yard work, spring cleaning if you will. A little sweat on our brow was cured by this icy drink.
I used a food processor to blend all the ingredients, it took 3-5 minutes. If you’re patient, let it sit in the fridge for an hour so the flavors meld. If not, skip that step and serve over a cup of overflowing crushed ice.
It made 4 glasses of agua fresca. I brought out a glass to my husband, whose hands were dirty from raking and gathering leaves into yard bags. He sucked it down so fast, I decided to bring him a second one. (I saved the other two for myself). This drink lasted about 5 minutes in our house.
- 1 lb. strawberries, hulled, plus whole strawberries for serving
- 1/4 cup mint leaves, plus sprigs for serving
- 1/2 cucumber, sliced (save some for serving)
- 2 limes, squeezed fresh for juice
- 1/4 cup sugar
- 3 tsp. rose water (optional)
- Club soda and lime wheels (for serving)
- Microwave 1 cup water and sugar until hot (about 1.5 minutes), in a glass bowl. Stir until sugar is dissolved.
- Purée hulled strawberries, mint leaves, lime juice, cucumber, sugar water, rose water (if using) in a blender or food processor until smooth. Transfer purée to an airtight container, cover, and chill until cold, about 1 hour.
- Place a fine strainer on top of a bowl and strain the solids from the juice. Use a spatula to press the puree into the bowl. Discard the solids. Pour purée into four 12-oz. glasses filled with crushed ice. Top off with club soda and garnish with mint sprigs, lime/cucumber wheels, and whole strawberries.
